Breaded aubergine fries

mpaniment to a main dish. Both melting and crispy, they allow you to enjoy this delicious vegetable in a different way. This easy and quick recipe is to be enjoyed without further delay!

Ingredients :

  • 800g aubergines
  • 1 egg
  • 50g flour
  • 80g breadcrumbs
  • 1 C. thyme _
  • 1 clove of garlic
  • Salt pepper
  • Olive oil

Steps :

1. To start, rinse the aubergines, then cut them into sticks about 1 centimeter thick. Ideally, have them drained. To do this, place them in a salad bowl and add coarse salt for about 30 minutes.

2. Then brown them for barely 5 minutes in a pan with a drizzle of olive oil to pre-cook them. Then place them on absorbent paper.

3. Mix the breadcrumbs, minced garlic, thyme, salt and pepper. In a separate container, beat the egg. Pour the flour into another bowl as well.

4. Roll the aubergine fries in the flour, then in the egg and finally in the breadcrumbs. Place them on a baking tray lined with baking paper. Repeat the process until you run out of fries.

5. Bake for 30 minutes at 200°C.
