Chicken and tomato quiche

If you’re looking for a meal to eat on the go, hot or cold, this chicken and tomato quiche is perfect! It will offer you a meal break that is both satiating and tasty. In addition, the tomatoes bring a real asset to this quiche!

Ingredients :

Pastry

  • 200g flour
  • 100g cold butter
  • 1 half tsp. salt
  • 8 cl of water

Trim

  • 200g cherry tomatoes
  • 400g chicken breast
  • 1 yellow onion
  • 100 g of parmesan
  • 20 cl of milk
  • 10 cl of liquid cream
  • 2 eggs
  • Thyme, parsley
  • Salt pepper

Steps :

1. First, make the shortcrust pastry. To do this, with the sheet of your robot or by hand, work the flour with the butter and the salt in order to have a crumbly dough similar to coarse sand.

2. Form a well and pour the water. Knead (but not too much) until you get a soft dough. Wrap it in cling film and refrigerate for 30 minutes.

3. Meanwhile, rinse the cherry tomatoes and cut them into quarters.

4. Peel and chop the onion and garlic. Then sauté the garlic in a drizzle of olive oil.

5. Dice the chicken, then cook it with the onions. Sprinkle with thyme and parsley.6. Preheat your oven to 200°C. Roll out your dough on a floured work surface to form a disk about 3 millimeters thick. Darken it in a pie dish and prick it with a fork.

7. In a bowl, whisk the eggs with the milk and cream. Add salt and pepper.

8. Arrange the chicken on the bottom of the pie and pour the liquid mixture over it. Then add the cherry tomatoes. Finally, sprinkle with parmesan cheese.

9. Bake for about 30 minutes. The dough must be golden and the filling must be cooked.

Serve your chicken and tomato quiche at the desired temperature!
