- 1 cucumber
- 2 small avocados
- 1 garlic clove
- 1 small bunch of mint
- 5 sprigs of parsley
- 3 tbsp . olive oil
- 1 lime
- Salt pepper
1. To start, peel the cucumber, then cut it in half lengthwise to remove the seeds.
2. Peel the avocados and cut the flesh into pieces.
3. In the blender, add the diced cucumber and avocado with the squeezed lemon juice, parsley, coarsely chopped mint, garlic clove, salt and pepper. If your preparation is too thick, do not hesitate to add a little cold water.
4. Reserve everything for at least 30 minutes in the fridge before tasting!
Serve your cold avocado and cucumber soup chilled!
