Quail egg muffins

As a starter or for brunch, these quail egg and bacon muffins are delicious and fluffy! Quail eggs are the product of animal origin with the most balanced content of proteins, vitamins, minerals and enzymes. They also contain many more vitamins than a chicken egg. Anyway, this surprise muffin will delight young and old!

Ingredients :

  • 225 grams  of T45 flour
  • 1  egg
  • 1 packet  of baking powder
  • 20ml  milk
  • 120 g  of grated cheese
  • 50g  melted butter
  • 100g diced bacon
  • 1 small green onion
  • 12  quail eggs

Steps :

1. Bring a pot of water to a boil and cook the quail eggs for 3 minutes. Plunge them into cold water to stop the cooking, then let them cool down before scaling them.

2. Rinse and chop the green onion.

3. In a bowl, mix the flour, baking powder and Gruyère. Dig a well in the center, add the chicken egg, the melted butter and the milk, then mix well until you obtain a smooth and homogeneous paste. Salt (but not too much, because the bacon already provides a lot) and pepper.

4. Fry your bacon lightly in a skillet. Then add it to the preparation with the green onion.

5. Divide batter into lightly greased muffin tins. Add a quail egg in the center of each muffin and bake for about 20 minutes at 180°C.

Let your quail egg and bacon muffins cool before enjoying them!
